The installation of the grease trap in the kitchen is usually done by a professional but can also be done by yourself with some plumbing bases. The installation of a grease trap is best done under the diving trap if there is enough space available. It is necessary to provide at least 10 cm above the tank to be able to open the cover, and 15 cm on each side for the connections. You will find the complete and detailed procedure in our video:

Connecting the grease trap

The grease trap is connected between the sink and the drain to the sewers. The waste water inlet in the grease trap is connected to the siphon under the diving tank. It is interesting to install a gooseneck siphon to avoid the risk of clogging a conventional siphon. The basket is used to collect solid waste.

The grease trap has a DN50 PVC valve and a 1''1/4 steel valve for grease drainage as well as a drain valve. An additional valve is provided for water back-up in the case of installations far from the plunge.

On the water outlet side, the grease trap is connected to the collective sewerage system. The highest PVC valve DN50 (open in normal operation), blocks water to allow grease to drain to the front panel (1''1/4 steel valve).

The valve in the lower part is used when emptying the tank and fine waste settling at the bottom of the tank. It is preferable whenever possible to connect this outlet to drain the unit whenever necessary.

If the grease trap is not directly installed under the plunger, it is necessary to connect the water to the ½'' connection with the 15/21 valve supplied. This valve always remains closed except when grease is to be removed.

Operation of the grease trap

Refer to document ref: BAGT® xx Grease Tank Operation - April 2017

The operation of the BAGT grease trap has been designed without PLC or electrical connection, to avoid the risk of failure, while being practical in its use. Waste water (water, grease, solid waste) from the plunge enters the grease trap basket. This 2mm mesh basket retains solid waste above the water to avoid dripping when removed. This basket should be emptied every day if possible, it is very easy to access.

Then the greasy materials separate from the water by settling. In the case of BAGT®xxN, the fat separation process is optimized by the lamellar system. These fats are recovered during the "emptying of fats", to be stored in a drum while waiting for their collection. These greases, collected by specialized companies, will be used as raw material in biodiesel production plants. Finally, pre-treated water can join the collective sanitation circuit.

Installation of a grease trap - Sustainable Development
A quick grease trap installation

The installation of a grease trap under the diving tank is simple and quick, less than half a day, often carried out by a professional. This type of grease trap does not require major installation work but requires regular maintenance in exchange. That is why we have made this work easier with the BAGT®xxN grease trays, thanks to our "Grease Back".

In the case of larger models of underground grease traps, the installation of a restaurant grease traps is mandatory since the traps must be buried. In this case, the maintenance is entrusted to a cleaning company, with a monthly frequency according to the NF EN 1825-2 standard.

You will find some details on the NF EN 1825 standard on the CNIDEP (National Centre for Innovation for Sustainable Development and the Environment in Small Enterprises) study.

The installation of grease traps can be subsidized, you can ask for information from the Chambers of Commerce or the Chambers of Trade.
